What’s Corn Macque Choux

Corn Macque Choux is a traditional Cajun dish of southern Louisiana. The recipe shows some Creole and American Indian cultural influences. Macque Choux is traditionally made with corn, onion, bell papers and spices.

What You’ll Need

  • nine ears corn
  • 1/4 cup oil
  • one chopped onion
  • 1/2 chopped small bell pepper
  • one tsp. salt
  • 1/2 tsp. black pepper
  • 1/4 tsp. cayenne pepper

This should serve about six to eight people.

How To Prepare Corn Macque Choux

First you will need to cut the corn off the cobs using a knife. Scrape the cobs with the blunt edge of the knife to get all the corn’s juices. Heat the oil in a large sauce pot and then add the corn and juices. Let the mixture cook on medium heat for about 10 minutes. After adding the remaining ingredients, let the dish cook for 40 minutes while stirring frequently. Of course you can customize the dish according to your taste. Add some bacon to make your Macque Choux hearty and give it a special taste. Other recipes sometimes call for tomatoes, garlic and celery. It just depends on what you and your family prefer to eat.
