It’s a traditional Southern New Year’s Day meal Black-Eyed Peas. It has been said that you will have good luck throughout the year if you eat Black-Eyed Peas on New Year’s Day. Black-Eyed Peas symbolize coins or wealth. People say the pork flavoring is considered a sign of prosperity and the greens stand for money. If you want to start 2020 right, give Mulate’s Cajun Restaurant’s Black-Eyed Peas a try:
What You Need
2 cups diced onions
1 cup diced bell pepper
1/4 cup diced celery
1 lb. pickled pork
2 cloves garlic
1 1/2 tbsp. Mulate’s Cajun Seasoning
2 tsp. salt
1 lb. black-eyed peas, rinsed and drained
6 cups of water
4 cups reduced sodium chicken broth
How It’s Done
In a large pot over medium heat, saute onion, bell pepper, and celery for 15 minutes. Meanwhile, in a separate pot, boil the pickled pork for 10 minutes to remove excess salt. Drain and set aside. Add garlic to sauteed vegetables and cook for three minutes. Stir in Mulate’s Cajun Seasoning and salt. Add pickled pork, peas, water, and broth. Cover and simmer on low for 2 1/2 to 3 hours, stirring occasionally until beans are soft. Uncover and cook for 15 minutes. Serve over rice. This dish should serve about 8 people. (Tip: this recipe is easily doubled, but you should use 3 cups of diced onions and 1/12 cup of diced bell pepper.)
