Baked Potato Soup
Trying to come up with meals that will make everybody in your family happy every day of the week can be a struggle. We have a recipe that’s quick and easy and that they will love. You most likely already have all the ingredients in your kitchen. If you choose to make a bigger batch of this potato soup, you can always put some of it in the freezer and feed them again with this delicious and healthy dish.
What You Need
- 4 large baking potatoes
- 6 tbsp. butter
- 1/2 cup flour
- 10 cups whole milk
- 1 tbsp. Mulate’s Cajun Seasoning
- 1/2 tsp. salt
- 1/8 tsp. cayenne pepper
- 1/2 cup chopped green onions
- 2 cups shredded cheddar cheese
- 8 slices crisp-cooked bacon
- 4 oz. sour cream
How It’s Done
Preheat your oven to 400 degrees. Rinse and dry the potatoes. Wrap them individually in aluminum foil and bake them for 1 hour and 15 minutes. Then, take them out of the oven, unwrap them and slice them in half. Scoop the potatoes out of their skin and put them into a medium bowl. You can discard the skins.
In a large soup pot, melt the butter over medium-low heat. Add flour, stirring constantly with a whisk. Once the flour is dissolved, cook for about 3 minutes while stirring constantly. Now, raise the heat to medium; add milk, 2 cups at a time, still stirring constantly. Cook for about 15 minutes, until thick. Reduce heat to medium low and add the potatoes, dry seasoning, 2 tbsp. green onions, and 1 and a 1/2 cups shredded cheddar cheese. Crumble the bacon and add to soup, reserving 1 tbsp. Mix until well blended. Stir in sour cream. Serve using remaining green onions, cheese and bacon as garnish. Serves about 8 as an appetizer. And if you don’t feel like cooking, take them to Mulate’s!
