Ingredients:
Preheat oven to 400 degrees. Place cornmeal in a bowl and add boiling water. Mix well and set aside to cool. Meanwhile, in a large mixing bowl, combine all remaining ingredients except the cracklin’. Add cooled cornmeal mixture and mix until well blended. Fold in cracklin’ and place mixture in a greased 9×9 pan. Bake for 20 minutes or until a toothpick inserted in the center comes out clean.
